Low carb biscuits

These little fellows are really easy to prepare and bake, and best of all they are low carb! This recipe should be enough to make 8 medium size biscuits or you can do mini biscuits as I did.



Here is a graphic summary of what you'll need:

Dry ingredients

Wet ingredients

Makes 8 biscuits

3/4 cup of almond flour
1/4 cup of coconut flour
1/2 tsp of baking soda
1/8 tsp of baking powder
1/2 tsp salt (to taste)
1 tbsp coconut oil
2 tbsp unsalted butter (softened)
2 tsp lemon juice (or 1 tsp white vinegar)
1 tbsp honey (optional)
3 eggs (or 6 egg whites)
1/4 cup greek yogurt

Directions:
***Dry and wet mixtures must be worked individually***
1. Preheat oven 350F.
2. Line baking sheet with parchment paper.
3. In a large bowl, combine almond flour, coconut flour, salt, baking powder and baking soda.
(skip if using whole eggs) 3.5 Whisk egg whites until they peak.
4. In another bowl, whisk butter, coconut oil, lemon juice and honey until smooth. Add slowly yogurt and egg whites (or eggs), beat until combined.
5. Add wet mixture to the dry mixture (not the other way around) and combine.
6. Scoop batter using a spoon, you can either roll it using your hands or drop it directly onto the baking sheet.
7. Bake for about 15 minutes or until golden brown.
8. Serve as you like (I love them warm!)

As shown in the comparison image below one almond flour biscuit has only 5 grams of net carbs (7 c. - 2 fiber) whereas a KFC biscuit has 21! The nutrition facts for our biscuits are for a recipe that includes honey and eggs. If you want to reduce the amount of sugar and cholesterol then use egg whites (or substitute) and leave out the honey.
